Cairenes often eat at home, or on the run, grabbing a sandwich or a plastic container of koshary, a maelstrom of macaroni, rice, lentils, fried onions, and tomato sauce. "For a real baladi [local] experience," says Nicha Sursock, one of Cairo's leading restaurateurs, "go to Abou Tarek." This three-story koshary emporium at 40 Champollion Street fills up with families and couples gathered around shiny metal tables.
